In der Kellerei werden sie sortiert und behutsam aufgebrochen. Anschlieend erfolgt die Grung im Edelstahltank zu 50% und 50% im Holzfass bei kontrollierten Temperaturen. Der Chteau Clarke reift zu 100% in Barriques aus Eichenholz.
