Um Gyokuro ernten zu knnen werden die Teestrucher einmal im Jahr, im Mai, whrend 3 Wochen zu 90% beschattet, daher auch der Name "Schattentee". Dadurch steigt der Chlorophyll und Koffeingehalt in den Blttern an. Der Tee wird mild, leicht ssslich und entwickelt viel Umami. Bei richtiger Zubereitung
